Ingredients
  

  • 2 oz dark rum 60 ml
  • 4 oz ginger beer 120 ml
  • 1/2 oz fresh lime juice 15 ml
  • 1 cup ice cubes approximately 140 g
  • 1 lime wedge or wheel for garnish, optional

Method
 

  1. Chill the glass
    For an extra-refreshing cocktail, place a highball or Collins glass in the refrigerator or freezer for several minutes before preparing the drink.

  2. Add the ice
    Fill the glass almost completely with ice cubes. Large cubes are ideal because they melt more slowly and help prevent excessive dilution.
  3. Pour in the ginger beer
    Add 4 ounces (120 ml) of ginger beer over the ice.

  4. Add the lime juice
    Pour in 1/2 ounce (15 ml) of freshly squeezed lime juice. Stir very gently once or twice to combine it with the ginger beer without losing too much carbonation.

  5. Float the dark rum
    Slowly pour 2 ounces (60 ml) of dark rum over the top.
    For a more defined layered effect, pour the rum gently over the back of a bar spoon held just above the surface of the drink.

  6. Garnish and serve
    Add a lime wedge or wheel to the rim of the glass and serve immediately.
    Leave the drink layered for presentation, then stir before drinking if you prefer the flavors fully combined.

Notes

  • Use ginger beer, not ginger ale, for the classic flavor. Ginger beer has a stronger, sharper ginger bite that balances the richness and sweetness of the dark rum.
  • Choose a spicy ginger beer. A bold, highly carbonated variety gives the cocktail more character and prevents the rum from overpowering the drink.
  • Always use fresh lime juice when possible. It provides a brighter, cleaner citrus flavor than most bottled lime juices.
  • Pour the rum slowly. Adding it last and pouring gently creates the dramatic dark layer responsible for the cocktail's distinctive appearance.
  • Avoid over-stirring. Excessive stirring releases carbonation and can make the ginger beer taste flat.
  • Adjust the strength. For a lighter drink, reduce the rum to 1 to 1 1/2 ounces and increase the ginger beer to 5 or 6 ounces.
  • Make it more citrus-forward. Increase the lime juice slightly if you prefer a brighter, more tart cocktail.
  • Add extra ginger heat. Use an extra-spicy ginger beer or garnish with a thin slice of fresh ginger.
