Chia Seed Pudding

Chia seed pudding is a handful of basic ingredients that can turn into something surprisingly delicious.
With almost no effort, chia seeds transform milk into a smooth, creamy pudding that feels wholesome, satisfying, and a little bit magical.

Ingredients
  

  • 1/4 cup chia seeds
  • 1 cup milk of choice almond, coconut, oat, or dairy
  • 1 tbsp maple syrup or honey
  • 1/2 tsp vanilla extract
  • Pinch of salt

  • 1/4 cup fresh berries
  • 1/2 banana, sliced
  • 1 tbsp chopped nuts
  • 1 tsp shredded coconut
  • 1 tsp nut butter

Method
 

  1. In a medium mixing bowl, combine chia seeds, milk, maple syrup (or honey), vanilla extract, and a pinch of salt.
    Whisk well for about 30 seconds until fully mixed and smooth.
    Let the mixture sit for 5 minutes, then whisk again thoroughly to break up any clumps and ensure even texture.

  2. Cover the bowl or pour the mixture into two jars or serving bowls.
  3. Refrigerate for at least 2 hours, or until thick and pudding-like (overnight chilling gives the best results).

  4. Stir once more before serving, then enjoy as is or top with fruit, nuts, or nut butter.
